The Gear I Use Every Week
People often ask me what equipment I use to run Ojo’s Pizza. From cooking tools to event setup, this is the exact kit I rely on week in, week out.

🍕 Cooking & Baking Tools
Caputo Saccarosso Flour
This is the flour I use for authentic Neapolitan-style pizza. It’s consistent, easy to work with, and produces that soft yet airy crust with a good bite. I used to use the blue pizzeria variety but now I use the saccorosso - Check it out here
Gi.Metal Professional Triangular Spatula
My go-to spatula for cutting and moving dough balls. It’s lightweight, sturdy, and thin enough to bend and slide under pizzas without sticking. Cheaper versions bend, warp or scratch the dough tray. This is perfect. Check it out here.
Pizza Cutters
Sharp, durable and designed for service with colour coding to help with food hygiene. I’ve tried plenty, but these give clean cuts every time, even on thick bases. Check them out here.
Infrared Thermometer
A must-have for wood-fired ovens. This tool lets me check the exact surface temperature of the oven floor so I know when it’s perfect for baking. It's as important as a pizza peel!
Consistency is everything in dough making. These heavy-duty scales handle big batches of flour and water and haven't let me down. Check it out here.
Wireless Temperature Thermometer Pack
If you make dough then you'll know how important the air temperature is. I use one of these in the room where I make the dough and I use one to monitor the temperatures in our Igloo cool box (below) These allow me to monitor the temperature from anywhere at any time, they also allow me to keep a log of temperature fluctuations over a very long period of time, so I can look at temperature changes over months! 🎪 Event & Setup Gear
Strong, weatherproof, and easy to put up. A solid gazebo is essential for outdoor pizza events, and these have stood up to plenty of British weather! I use two of these, one for the 'kitchen' and one for the customers to shelter underneath in the bad weather. They come with weight bags that you can fill with your own ballast. Customer/Order Buzzers
These save chaos at busy events – customers get a buzzer when they order and collect their pizza when it goes off. No shouting order numbers or names, no missed orders. They can be set to buzz or to buzz and to make a beeping sound. These are a game changer! Check them out here.
Square Card Reader
Quick, reliable, and compact. I’ve used this for hundreds of transactions without a hiccup – perfect for mobile catering. It's really easy to use, low fees, great battery life and just a great bit of kit. It also has some great reporting to tell you more about your business and transaction types, also about best sellers and it can also integrate with third party delivery platforms and kitchen systems.
Igloo Large Cool Box
Keeps ingredients fresh and safe during long events. This cooler holds plenty and actually keeps ice solid for hours. I keep one of my wireless thermometers in here to monitor the temps. Check it out here.
Heavy Duty Tin Opener
If you go through big cans of tomatoes, you need a proper tin opener. This one doesn’t slip or jam – built for high-volume use. Check it out here.
